We take great care of them the traditional way
Our cultivation technique remains true to local tradition, as the lemon trees grow at their pace. We grow oval Sorrento lemons under protective pagliarelle, hand crafted pergolas with straw mats and chestnut wood beams, set upon terraces of lemon trees.
Our respect for their long ripening process means we harvest the lemons 4 or 5 times a year, in harmony with the natural cycles of this climate and the agricultural traditions of the region. To maintain this balance with the natural resources of the area, rainwater is saved in tanks for watering the trees in the hottest, driest months.
Maximum quality can only be achieved by hand
Artisanal techniques and the value of working by hand are present in the lemon grove: the fruits are picked individually by hand, to ensure the lemons never touch the ground, and always at the exact point of ripeness, to be used in the traditional recipe without artificial flavourings or colourings.
Also, Villa Massa respects the environment through traditional cultivation supervised by local cooperatives, ensuring the traceability of the product and the artisanal, almost ancestral techniques of our culture.

We pick our valuable, precious Sorrento lemons by hand.
We peel the lemons with the greatest care to ensure only the zest is collected in delicate layers of peel.
We then leave these peels in alcohol, in a cold maceration process, to transfer the essential oils from the peel to the alcohol.
We filter the result several times, and mix the lemon-peel infusion with a filtered syrup made with sugar and water.
